Today I’d like to share one of my recent favorite salad recipes. The dressing is the main part of this salad as I use a lot of Yuzu (Japanese citrus fruit), which makes the salad very refreshing. This dressing goes with pretty much anything, this time I mixed swiss chard with some tomatoes and mushrooms – basically the left overs I had in my fridge.
- 1/4 Yuzu
- 1 table spoon of soy sauce
- 1 table spoon of maple syrup
- 1 table spoon of rice vinegar
- 1/2 table spoon of sesame oil
Basically all you have to do is grate Yuzu zest, mix everything, and pour it on your favorite vegetables. I like it when the Yuzu flavor is strong, so I chop up the zest and sprinkle them on top at the end. That’s it!
If you don’t have maple syrup you can replace it with sugar, but I prefer maple syrup because I think it makes the taste richer. And maple syrup is really good for you too.
